INGREDIENTS:
2 cups wheat flour
½ cup semolina
a little fennel
Cardamom powder
2 cups Jaggery or sugar
½ cup grated coconut
½ cup Galway Rice Bran Oil for kneading
Nutriflow Rice Bran Oil for frying
2 tablespoons ghee
4 cardamoms.
METHOD:
Heat jaggery or sugar with a little less than ½ cup of water in a pot. Stir until fully dissolved. Strain the mixture and let it cool slightly. Add ghee to this mixture. Peel and grind the cardamom into powder. In a bowl, mix wheat flour, semolina, ground cardamom, fennel and grated coconut. Add Galway Rice Bran Oil for kneading. Use the jaggery or sugar mixture to knead a stiff and dry dough. Heat Nutriflow Rice Bran Oil in a pan. Make small dough balls and shape them using a Thekua mold. Fry the Thekua in medium-hot oil, turning them until they are brown and cooked through. Fry on medium to low heat for best results.
